Daily specials.

The sheet changes every day based upon recent product arrivals , what’s left to sell from the day prior and standing orders and pars received on various days of the week. Most “specials” have a life of 2-3 days depending on the amount of the protein per that dish that came in and how we want to prepare it. Ex: some fresh items that are more perishable we’ll try to sell that day, but others that we cure/braise/smoke,etc can run for more than a day.

Composed dishes off of this sheet that are really outstanding sometimes get a somewhat long term appearance here…and even “graduate” to the permanent menu and become signature dishes. Because we print these everyday to place in the menus, the process of editing and cross checking lasts all morning until we get as close as we can by 4pm to give to the hostesses, chefs, and waitstaff for final review of the day. Everyone plays a role, and it’s one of many things that continues to make Uchi so balanced and incredibly consistent.
