Permitting complete and general contractor selected; Uchiko’s “shell” will start construction inside at 4200 N.Lamar hopefully by Jan.7th. More updates to come. It’s been a fantastic year at Uchi in 09 and we look forward to serving Austin in the year to come. Merry Christmas to everyone from the Uchi staff!

The eventual front wall for Uchiko, the other side of this wall is the Uchiko cafe/bar. This area of Uchiko will be dedicated to walk in customers, and the full on dining experience will also be available. In contrast with this and the current Uchi, we’re shooting to do mostly reservations in Uchiko’s dining and private dining rooms….hopefully nullifying our biggest complaint: the wait.

Once this plywood wall is clad and all exterior walls are complete: the fun starts and we begin building/finishing the Uchiko space!

This is a pic of the tree where the bartop came from and the man who cut it down with a rather large chainsaw. Amazing process and skill to cut the wood into pieces as linear and large as the ones we are so fortunate to use.

These 2 incredible pieces of wood are reclaimed from a 165 yr old pecan tree that grew near the Colorado river here in Texas. Both of them are still in a “raw” state, but will soon go through a kiln to be dried of all their moisture and eventually combined to make the surface for the bar at Uchiko. One of many types of local and green materials were putting together for the interior finishes…i cannot wait to see it completed.

Current pic of Uchiko space. Michael Hsu has done such an amazing job on the redux of the building a lot of people think it’s entirely new!

This is the northeast corner where Uchiko will live. There is a false front on it right now, but eventually our restaurant space will come out past the temp beams and will look as close to “home” as possible. I walked the space yesterday, and am hoping we can go in and start our interior finishes by the beginning of next year/Jan. 1st!
